Pesto Zucchini

Ingredients
1 tablespoon olive oi
1 onion, chopped
2 and ½ pounds zucchini, roughly
½ cup water
1 and ½ teaspoon salt
1 bunch basil leaves
2 garlic cloves, minced
1 tablespoon extra-virgin olive oil
Zucchini noodles
How To:
Set up the instant pot to saute mode with adding add olive oil
Once the oil is hot, add onion and Saute for 4 minutes
Add zucchini, water and salt
Lock up the lid and cook on HIGH fire for three minutes
Release the pressure naturally
Add basil, garlic and leaves
Use an immersion blender to blend everything well until you have a sauce like consistency
Take the extra zucchini and pass them through a Spiralizer to get noodle like shapes
Toss the Zoodles with sauce and enjoy!
