Potato And Buttermilk Meal

Ingredients
1/3 cup buttermilk, low -fat
½ teaspoon salt
¼ cup sour cream
3 cups water
2 pounds russet potatoes, peeled and quartered
1 teaspoon salt
2 tablespoons butter
Parsley, as needed
Pepper as needed
How To
Start by adding water, then salt, then potato to Instant Pot, stir well
Lock lid and cook on HIGH Pressure for ten to twelve minutes
Then very quick release pressure
Open lid and let drain the water except ½ cup add potatoes to blender, add ½ cup water too
Add in all the remaining ingredients and blend very well to create a mash like consistency
Serve and enjoy!
